Good to see someone as anal as me about trying out new stuff before a big event!!
I’ve done a few weddings on an informal basis, and have had very good results using my Canon 70-200mm f/4.0L IS. While the image stabilisation is good to get a couple of stops of anti-camera-shake, you do have to beware that it can’t compensate for movement of your subject. I know *you* know what you’re doing, but *I* got a few shots of blurry people simply because the slower shutter speed afforded by IS couldn’t freeze their movement (Of course, done creatively, this can add something to the shot, but isn’t always as desired!)
